Grilled Field/Flats or Portobello Mushrooms with Tomato & Herbs
Serves 4, Preparation time: 10 mins, Cooking time: 4 mins
Ingredients
1/3 cup olive oil 2 tbs finely chopped English Parsley 2 tbs finely chopped chives Salt and ground black pepper 2 tbs Worcestershire sauce 4 large or 8 medium flats/field/portobello, stalk trimmed 2 tomatoes, thickly sliced Thick bread, toasted to serve
How to cook
1. Combine 2 tbs olive oil, parsley, chive & salt & pepper in a small bowl, mix well to combine. Cover and set aside.
2. Combine the remaining 2 tbs oil, Worcestershire sauce and salt & pepper in a small bowl, mix well to combine. Brush the mixture over both sides of the mushrooms.
3. Preheat a greased pan or chargrill on high. Add the mushrooms and tomato slices and cook the mushrooms for 1-2 minutes on each side and the tomato for 1 minute on each side or until tender.
4. To serve, place mushrooms onto the toast, top with tomato & drizzle with herb oil. Serve immediately.
