Mushrooms are best stored unwashed, in brown paper bags on the bottom shelf of the refrigerator. Mushrooms should not be stored in plastic bags or air-tight containers, as the mushrooms will “sweat” and become slimy. Do not rinse mushrooms until ready to use.
One of the great things about mushrooms is that there is practically no waste, so you can get exactly what you paid for!
Gently wipe mushrooms with a damp cloth or soft brush to remove occasional peat moss particles.
Rinse with cold water and pat dry with paper towel. Never soak mushrooms.
There is no need to peel mushrooms or remove the stems, as they are both full of flavour and high in nutrients.
On occasions that you need to remove the stems, chop it up and add into stuffing, casseroles, soup or sauces.
